In dry-curing salumi, longevity and microbiological safety are achieved by removing water until Water Activity ((a_w)) drops below 0.88. At (a_w le 0.88), bacteria (including Staphylococcus aureus and Salmonella) cannot access the unbound free water necessary to metabolize and reproduce, rendering the meat indefinitely shelf-stable at cellar temperatures.
The Dreaded Nemesis: Case Hardening
Moisture inside a muscle does not disappear magically; it must slowly diffuse from the moist core to the surface, where chamber airflow wicks it into the air. If the curing chamber is too dry (RH < 70%) or air movement is too aggressive:
- The outer 3 millimeters of meat desiccates into a leathery, rock-hard rind ("case hardening").
- This dry perimeter forms an impenetrable barrier, permanently trapping moisture in the center.
- The trapped moist center eventually rots, turns gray, separates from the casing (creating hollow cores), and develops foul anaerobic spoilage.
Optimal Chamber Calibration Schedule
To ensure uniform outward moisture diffusion, keep the drying chamber at 54°F to 58°F (12°C - 14°C) and follow a stepped relative humidity program:
Weeks 2 - 4 (Main Evaporation): 78% - 82% RH (0.5% to 0.8% loss/day)
Final Weeks (Slow Finish): 75% - 78% RH until reaching 35% total loss
