The Science of Cold-Smoking Foods
Cold smoking is the artisanal preservation and flavoring technique of exposing cured meats, cheeses, fish, and seasonings to clean hardwood smolder at temperatures strictly below 85°F (29°C) (and ideally below 65°F / 18°C for cheese). Unlike hot smoking, cold smoking does not cook food proteins.

Crucial Food Safety Rules for Cold Smoking
Raw meats (bacon, ham, salmon) must always undergo proper sodium nitrite/nitrate curing (Prague Powder #1 or kosher dry cure) before cold smoking to inhibit pathogenic bacteria such as Clostridium botulinum. Cold-smoked cheese must be vacuum-sealed and rested in the refrigerator for 2 to 3 weeks to allow acrid surface creosotes to mellow into sweet, nutty smoke notes.
