The Science of Espresso Extraction Yield (EY)
A roasted coffee bean is roughly 28% to 30% soluble in hot water. The remaining 70% is insoluble woody plant cellulose. The goal of espresso brewing is not to dissolve everything, but to extract the sweet sugars, organic acids, and aromatic lipids while leaving harsh, bitter chlorogenic acids behind.

Using a digital coffee refractometer measuring Total Dissolved Solids (( ext{TDS}%)), the true Extraction Yield is calculated as:
Diagnosing Extraction Faults
- Under-Extraction (( ext{EY} < 18%)): Sour, salty, sharp, lacking sweetness with a fast, fleeting finish. Caused by grinding too coarse, water too cold, or stopping the shot too early.
- Balanced Golden Zone (( ext{EY} = 18% - 22%)): Peak sweetness, rounded stone fruit acidity, complex aromatics, heavy velvety mouthfeel.
- Over-Extraction (( ext{EY} > 22.5%)): Astringent, dry, mouth-puckering, medicinal, bitter, like oversteeped black tea. Caused by micro-channeling, grinding too fine, or pushing excessive water through spent pucks.
