The Science of Wild Ginger Bug Fermentation

A wild ginger bug is a symbiotic community of wild yeast and lactic acid bacteria residing on the skin of fresh organic ginger rhizomes (Zingiber officinale).

The Decoction & Inoculation Process

  1. Hot Decoction: Simmer grated fresh ginger and sugar in 1/3 of the batch water for 15 minutes to extract pungent gingerol resins and sterilize competing bacteria.
  2. Cool Down: Add cold water and freshly squeezed lemon juice to drop the liquid temperature strictly below 30°C (86°F). Hot liquid kills live ginger bug yeast instantly!
  3. Pitch Bug: Stir in the strained active ginger bug and bottle immediately in heavy-gauge flip-top bottles leaving 1.5" of headspace.
