Preparation Protocol

Why did my amazake turn sour instead of sweet?

The incubation temperature fell below 50°C (122°F). At lower temperatures, wild airborne lactic acid bacteria thrive and convert sugars into lactic acid. Maintain a reliable 55°C-60°C throughout the 10-hour incubation.

Can I make amazake using brown rice or oatmeal?

Yes! Cooked brown rice, oats, barley, or sweet potatoes can all be saccharified by rice koji. Brown rice yields a nutty, caramelized flavor profile, though it requires slightly longer cooking to gelatinize the bran coat.

Does amazake contain any alcohol?
