Panettone is the ultimate test of artisanal baking. Leavened solely with Pasta Madre (Lievito Madre) at ~45% hydration, it relies on a delicate balance of lactic and acetic acids to emulsify massive loads of butter, egg yolk, and sugar without gluten breakdown.

Acidity Control & Bagnetto

Authentic panettone requires a 3:1 ratio of lactic to acetic acid. On production morning, the starter is sliced and washed in a sweetened water bath (bagnetto: 1 liter water at 21°C with 1-2g sugar) for 15-20 minutes to leach out harsh excess acetic acid.

Production Day Triple Refreshment

  1. 08:00 (Feed 1): Bagnetto wash, then 100g Madre + 100g Flour (W380) + 45g Water. Ferment at 28°C.
  2. 12:00 (Feed 2): 100g Madre + 100g Flour + 45g Water. Ferment at 28°C.
  3. 16:00 (Feed 3): 100g Madre + 100g Flour + 45g Water. Ferment at 28°C.
  4. 20:00 (Primo Mix): Starter must triple in volume with pH between 4.05 and 4.15.
