Why You Must Dilute Standard Wine

Standard table wine ranges from 12.0% to 15.0% ABV. Acetobacter cannot survive in alcohol concentrations above 8.0% ABV. Pitching a mother of vinegar directly into a bottle of 14% Cabernet Sauvignon will shock and kill the bacterial colony. Wine must be diluted with dechlorinated water down to 5.5% to 6.5% ABV before fermentation can take place.

Sulfites (SO2) and Dechlorination

Commercial wines often contain sulfur dioxide (potassium metabisulfite) added as a preservative. Sulfites stun Acetobacter. If using commercial bottled wine:

  • Let the diluted wine sit uncovered with a cloth for 24 to 48 hours to allow volatile SO2 to off-gas before adding the mother.

  • Always use non-chlorinated spring water or boiled/cooled tap water for dilution, as chlorine suppresses bacterial activity.
