Why Equilibrium Curing (EQ) Beats Traditional Box Curing

Traditional bacon recipes use excess salt and tell you to "rinse after 7 days". If you leave the slab in for 8 days, it becomes unpalatably salty and inedible. Equilibrium Curing (EQ) measures the exact percentage of salt and nitrite the meat needs to reach osmotic equilibrium.

You place the meat and weighed cure into a vacuum-seal bag. Once the meat absorbs all the salt in the bag, it physically CANNOT become any saltier, whether you leave it for 8 days or 28 days!

The USDA 156 PPM Sodium Nitrite Formula

Prague Powder #1 (also called InstaCure #1 or pink curing salt) consists of 6.25% sodium nitrite and 93.75% table salt. The USDA maximum limit for dry-cured bacon is 156 parts per million (PPM) of sodium nitrite:

Cure_1_Grams = (Meat_Grams × 156) / (0.0625 × 1,000,000) = Meat_Grams × 0.002496

Calculating Fridge Curing Time

Salt and nitrite penetrate meat at a rate of approximately 1/4 inch per day plus 2 safety buffer days. A 1.75-inch thick belly needs at least: ((1.75 imes 4) + 2 = mathbf{9 ext{ days}}) in the refrigerator at 36°F to 40°F, flipping the bag once daily.

Frequently Asked Questions

Why is sodium nitrite mandatory for smoked bacon?

When bacon is warm-smoked between 100°F and 160°F in an oxygen-depleted smoker, it creates the ideal breeding environment for Clostridium botulinum. Sodium nitrite completely blocks botulism spore germination, fixes the characteristic pink cured color, and prevents rancid lipid oxidation (warmed-over flavor).

Can I use Prague Powder #2 instead of #1 for bacon?

Never! Prague Powder #2 contains sodium nitrate (with an "a"), which is formulated exclusively for long-term dry-cured charcuterie (salami, prosciutto) aged for months. In bacon that will be fried at high temperatures, nitrates convert into nitrosamines. Only use Prague Powder #1.

Do I need to soak or rinse equilibrium-cured bacon before smoking?

Never soak EQ cured bacon! Soaking leaches out the perfectly calculated salt and nitrite. Simply remove the belly from the bag, rinse surface spices off under cold running water, pat dry with paper towels, and rest uncovered in the fridge for 24 hours to form a tacky pellicle before smoking.
