Why Weight by System Total? In traditional gradient brining (e.g. an 8% salt bath), pulling the chicken 3 hours late results in an inedibly salty bird. In equilibrium brining, once the meat and brine reach osmotic balance, the meat will NEVER exceed your exact target salinity (e.g. 1.75%) regardless of how many days it soaks.

The Science of Equilibrium Brining

Unlike traditional culinary brining where meat is dropped into an arbitrarily concentrated salt solution (which creates a steep gradient and requires stopwatch timing), equilibrium brining (EQ brining) treats the meat and the surrounding water as a single closed thermodynamic system.

Salt ions ($Na^+$ and $Cl^-$) diffuse across meat cell membranes until the concentration inside the muscle fibers equals the concentration in the surrounding brine:

Total System Mass = Meat Weight + Water Weight
Salt Needed (grams) = Total System Mass × (Target Salinity % / 100)
Sugar Needed (grams) = Total System Mass × (Target Sugar % / 100)

Food-Safe Prague Powder #1 (InstaCure #1)

When curing meats destined for low-temperature smoking (under 200°F / 93°C) such as bacon, pastrami, ham, or corned beef, anaerobic botulism bacteria (Clostridium botulinum) thrive in the warm, oxygen-depleted smokehouse. Prague Powder #1 (6.25% sodium nitrite, 93.75% table salt) must be added:

PP#1 for 156 PPM Nitrite: PP#1_Grams = Total System Mass × 0.0025 (0.25%)

Because PP#1 is 93.75% sodium chloride, this calculator subtracts the salt contribution of the Prague Powder from your pure salt calculation to keep overall salinity exact.

Diffusion Penetration Speed

Salt diffuses into meat tissue at approximately 1/4 inch (6.3 mm) to 1/3 inch (8.5 mm) per 24 hours when held at safe refrigerator temperatures (34°F - 38°F / 1°C - 3°C). A 2-inch (50 mm) thick pork loin or chicken breast requires roughly 3 to 4 days to reach 100% core equilibrium.

Frequently Asked Questions

Why should I weigh salt instead of using tablespoons or cups?

Different salt brands have wildly different grain densities. 1 cup of Morton kosher salt weighs ~240 grams, whereas 1 cup of Diamond Crystal kosher salt weighs only ~140 grams (nearly half!). Using volume measurements causes severe over- or under-salting. Always use a digital kitchen scale in grams.

What is the ideal salinity percentage for turkey or chicken?

For whole roasted turkey, chicken breasts, and pork chops, 1.50% to 1.75% total salinity produces moist, perfectly seasoned meat that tastes balanced without being aggressively salty. For bacon and cured deli ham, 2.0% to 2.5% is standard.

Can I leave meat in an equilibrium brine for two weeks?

Yes! That is the core beauty of EQ brining. Once equilibrium is achieved, no more salt can enter the meat. As long as your refrigerator stays below 38°F (3°C) and the container is sealed, the meat will remain at that exact seasoning level without getting salty.
