Autolysis vs. Fermentation: Garum is NOT fermented by live bacteria; at 18% salt or 140°F, bacteria are dead or dormant. Proteolysis is driven entirely by thermal digestive enzymes (trypsin & pepsin).

No Botulism Risk: Pathogenic Clostridium botulinum cannot grow above 10% salt concentration.

Viscera Requirement: If making authentic Roman garum without koji, you MUST include the fish digestive organs (guts and stomach). Muscle meat alone has almost no proteolytic enzymes and will sit unchanged for months. Viscera contains the enzymes that liquefy flesh.

The Science of Garum & Fish Sauce

Garum (the prized seasoning of antiquity) and Southeast Asian fish sauce (*nuoc mam*) are the result of autolytic enzymatic proteolysis. Endogenous digestive enzymes (pepsin in the stomach, trypsin in the intestines) break down complex insoluble muscle proteins into water-soluble amino acids and short peptides:

Salt Barrier Rule: Salt % = Salt_Weight / (Protein + Koji + Water + Salt) × 100 ≥ 15%
Enzyme Optimum: 130°F to 140°F (55°C to 60°C) for rapid enzymatic digestion

The Noma Warm-Chamber Method

Traditionally, fish sauce takes 9 to 18 months of solar heating in earthenware jars. The modern fermentation protocol developed by René Redzepi at Noma uses a temperature-controlled fermentation chamber held at 140°F (60°C):

  • At 140°F, bacterial spoilage and mold growth are physically impossible (pasteurization zone).
  • Proteolytic enzymes operate at maximum kinetic velocity.
  • Full liquefaction is achieved in only 6 to 10 weeks instead of a year!

Frequently Asked Questions

Does garum smell foul while fermenting?

Surprisingly, no! High-salt (18%) fish sauce and koji garums smell rich, savory, and toasty, like roasted anchovies, beef stock, and dark soy sauce. If a batch smells putrid or sulfurous, salt was under-dosed and spoilage bacteria took hold.

How do I filter the finished garum?

After liquefaction, strain the mash through a fine wire mesh sieve to remove large bones, then filter the dark amber liquid through unbleached coffee filters or a nut milk bag. You will be left with crystal-clear amber elixir.

Can I make garum with meats other than fish?

Yes! Using the Noma koji method (50% koji by weight), you can craft incredible garums from roasted chicken wings, beef trim, squid, mushrooms, or game meats.
