Under United States FDA regulations for Acidified Foods, the legal dividing line for room-temperature shelf stability is pH 4.60. Above pH 4.6, deadly anaerobic spores of Clostridium botulinum can germinate and produce the lethal botulinum neurotoxin.
Why Commercial Makers Target pH ≤ 3.8 (The 0.6 Buffer Rule)
While the law permits pH 4.6, professional food scientists strictly mandate a target equilibrium of pH 3.6 to 3.8 (or maximum 4.0) because:
- Equilibrium Lag: Thick vegetable pulp, seeds, and garlic cloves take several days to absorb acid. A sauce reading 4.2 on day one can drift up to 4.7 as interior alkaline cell walls neutralize vinegar.
- pH Meter Drift: Handheld glass electrode pH meters frequently drift by ±0.2 pH without daily buffer calibration.
Hot-Fill-Hold Processing
Acidity prevents bacterial growth, but does not sterilize mold and yeast spores. To seal bottles without refrigeration, bring the blended sauce to a simmer at 185°F (85°C), fill sanitized bottles immediately, invert the capped bottles for 3 minutes to sterilize the lid with boiling liquid, and let cool.
