Kvass is an ancient Eastern European fermented beverage dating back over a millennium. Two distinct traditional variations exist:

Can I reuse the fermented beets for a second batch?
Yes! Once you bottle your finished beet kvass, leave the fermented beet chunks in the jar and pour fresh 2% salted water over them. The second brew ferments twice as fast (2-3 days) because the bacterial culture is already fully established.
